{"id":344,"date":"2026-02-17T18:19:09","date_gmt":"2026-02-17T18:19:09","guid":{"rendered":"https:\/\/www.libertymanagement.us\/fda-support\/?p=344"},"modified":"2026-02-17T18:20:28","modified_gmt":"2026-02-17T18:20:28","slug":"pasta-sauce","status":"publish","type":"post","link":"https:\/\/www.libertymanagement.us\/fda-support\/2026\/02\/17\/pasta-sauce\/","title":{"rendered":"Pasta Sauce"},"content":{"rendered":"\n<p class=\"wp-block-paragraph\">Pasta sauces\u2014a kitchen staple made from tomatoes, herbs,\nand other flavorful ingredients\u2014are regulated by the U.S. Food and Drug\nAdministration (FDA) to ensure they are safe from contamination and spoilage.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Facilities that manufacture, process, pack, or hold pasta sauces intended for consumption in the United States must complete&nbsp;<strong><a href=\"https:\/\/www.fdahelp.us\/fda-food-registration.html\">Food Facility Registration<\/a><\/strong>&nbsp;with the FDA.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">For\u00a0<strong><a href=\"https:\/\/www.fdahelp.us\/acidified-and-low-acid-canned-foods.html\">low-acid or acidified <\/a><\/strong>pasta sauces, facilities are also required to obtain\u00a0Food Canning Establishment (FCE) Registration\u00a0and submit a\u00a0Scheduled Process (SID) filing, in addition to standard Food Facility Registration.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The FDA defines\u00a0Low-Acid Canned Foods (LACF)\u00a0as any food (excluding alcoholic beverages) with a\u00a0finished equilibrium pH greater than 4.6\u00a0and\u00a0water activity greater than 0.85, when thermally processed in hermetically sealed containers.<br> Acidified foods\u00a0are low-acid foods to which acid(s) or acid food(s) are added to achieve a\u00a0finished equilibrium pH of 4.6 or below\u00a0and\u00a0water activity greater than 0.85.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A\u00a0Scheduled Process\u00a0specifies the exact time and temperature combinations, pH levels, container specifications, and other critical factors\u2014such as heat penetration data\u2014required to achieve commercial sterility. Each process must be developed and validated by a qualified\u00a0Processing Authority\u00a0for every product variation.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">In addition, pasta sauce labels must comply with the FDA\u2019s\u00a0general food <a href=\"https:\/\/www.fdahelp.us\/fda-label-review.html\">labeling requirements <\/a>under 21 CFR Part 101.
